Ingredients (Serves 4–5)

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup pumpkin puree (unsweetened)
  • 1 cup diced pumpkin or butternut squash (optional for texture)
  • 1 can (14.5 oz) diced tomatoes (no sugar added)
  • 1 cup chicken broth (low sodium)
  • 1 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp oregano
  • Salt and black pepper to taste
  • Optional toppings: fresh cilantro, a sprinkle of cheese, or Greek yogurt

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground turkey and cook until browned, breaking it up as it cooks.
  2. Add onion and garlic; sauté 2–3 minutes until softened.
  3. Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper.
  4. Add pumpkin puree, diced pumpkin (if using), diced tomatoes, and chicken broth. Mix well.
