Ingredients (Makes about 20–24 tots)

  • 2 cups grated zucchini (squeezed very dry)
  • ½ cup shredded cheddar cheese
  • ⅓ cup almond flour (instead of panko for lower carbs)
  • 1 large egg
  • 2 tbsp grated Parmesan
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper to taste
  • Optional: pinch of paprika or Italian seasoning

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Grate the zucchini and place in a clean kitchen towel or cheesecloth. Squeeze out as much liquid as possible.
  3. In a bowl, mix the drained zucchini, cheddar, almond flour, egg, Parmesan, garlic powder, onion powder, salt, and pepper until well combined.
  4. Scoop small portions and shape into tot shapes (or small cylinders).
  5. Place on the baking sheet and lightly spray or brush with oil for extra crispiness.
  6. Bake for 20–25 minutes, flipping halfway, until golden and crispy.
  7. Serve hot with sugar-free ketchup or your favorite dipping sauce.
