Ingredients (Serves 6)

  • 1 ½ lbs lean ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1–2 tbsp taco seasoning (sugar-free)
  • 4 cups beef or chicken broth
  • 1 can (10 oz) diced tomatoes with green chilies (no sugar added) or fresh diced tomatoes
  • ½ cup heavy cream or full-fat coconut milk
  • 4 oz cream cheese, softened (optional for extra creaminess)
  • Salt and black pepper to taste
  • Fresh cilantro, sour cream, and lime wedges for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Brown the ground beef with onion and garlic. Drain excess fat if needed.
  2. Add diced red pepper and taco seasoning. Cook 2–3 minutes.
  3. Pour in broth and diced tomatoes. Bring to a simmer and cook 8–10 minutes.
  4. Stir in heavy cream and cream cheese (if using) until smooth and creamy. Season with salt and pepper.
  5. Simmer another 3–5 minutes. Taste and adjust seasoning.
  6. Ladle into bowls and top with a dollop of sour cream, fresh cilantro, and a squeeze of lime.
