Ingredients (Serves 4)

  • 1 ½ lbs white fish fillets (cod, tilapia, or haddock), cut into chunks
  • 1 tbsp olive oil or coconut oil
  • 1 small onion or shallot, sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated (optional)
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 ½ cups chicken or fish broth
  • Juice of 1–2 limes
  • 1 tsp chili flakes or sliced red chili
  • Salt and black pepper to taste
  • Fresh cilantro, chopped
  • Green onions, sliced
  • Lime wedges for serving

Instructions

  1. Heat oil in a large pot over medium heat. Add onion and cook 2–3 minutes until soft. Stir in garlic and ginger.
  2. Pour in coconut milk and broth. Bring to a gentle simmer.
  3. Season with salt, pepper, chili flakes, and half the lime juice.
  4. Add the fish chunks and simmer gently for 5–7 minutes until the fish is opaque and cooked through.
  5. Taste and adjust with more lime juice or seasoning.
