- 1 ½ lbs lean ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1–2 tbsp taco seasoning (sugar-free)
- 1 bag (about 8–10 oz) low-carb tortilla chips or cheese crisps
- 2 cups shredded cheddar or Mexican blend cheese
- ½ cup sour cream or Greek yogurt
- 1 cup diced fresh tomatoes
- Fresh cilantro or parsley for garnish
- Salt and black pepper to taste
- Optional: sliced jalapeños or green onions
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.
- Heat oil in a skillet over medium heat. Brown the ground beef with onion and garlic. Drain excess fat.
