Ingredients (Serves 6)

  • 1 ½ lbs lean ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1–2 tbsp taco seasoning (sugar-free)
  • 1 bag (about 8–10 oz) low-carb tortilla chips or cheese crisps
  • 2 cups shredded cheddar or Mexican blend cheese
  • ½ cup sour cream or Greek yogurt
  • 1 cup diced fresh tomatoes
  • Fresh cilantro or parsley for garnish
  • Salt and black pepper to taste
  • Optional: sliced jalapeños or green onions

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.
  2. Heat oil in a skillet over medium heat. Brown the ground beef with onion and garlic. Drain excess fat.
  3. Stir in taco seasoning and a splash of water. Simmer 2–3 minutes. Season with salt and pepper.
  4. Spread a layer of low-carb chips in the baking dish. Top with the seasoned beef.
  5. Sprinkle shredded cheese evenly over the top.
  6. Bake for 12–15 minutes until the cheese is melted and bubbly.
  7. Remove from oven. Dollop with sour cream, top with diced tomatoes and cilantro. Serve immediately.
