High-Protein Cookie Dough Cheesecake

Ingredients (Serves 8)

Cookie Dough Layer:

  • 1 cup almond flour
  • 1 scoop vanilla or chocolate protein powder
  • 3 tbsp natural peanut butter or almond butter
  • 2 tbsp sugar-free maple syrup or monk fruit sweetener
  • ¼ cup sugar-free chocolate chips
  • Pinch of salt

Cheesecake Layer:

  • 16 oz (2 cups) full-fat Greek yogurt or cream cheese
  • 1 scoop vanilla protein powder
  • 3–4 tbsp powdered monk fruit or erythritol
  • 1 tsp vanilla extract

Topping:

  • Extra sugar-free chocolate chips
  • Crushed low-carb cookies or almond flour + sweetener mix

Instructions

  1. In a bowl, mix almond flour, protein powder, peanut butter, sweetener, chocolate chips, and salt until a soft cookie dough forms. Press half into the bottom of a glass dish.
  2. In another bowl, beat Greek yogurt (or cream cheese), protein powder, sweetener, and vanilla until smooth and creamy.
  3. Spread the cheesecake mixture over the cookie dough layer.
  4. Crumble remaining cookie dough on top and sprinkle with extra chocolate chips and cookie crumbs.
  5. Cover and refrigerate at least 1–2 hours (or overnight) until firm.
  6. Slice and serve chilled.
