Ingredients (Makes 1 loaf – Serves 8)

  • 6 large eggs, separated
  • 6 oz cream cheese, softened
  • ½ tsp cream of tartar (or lemon juice)
  • ¼ tsp salt
  • 1 scoop vanilla protein powder (optional, for extra protein and flavor)
  • 1–2 tbsp powdered erythritol or preferred low-carb sweetener (optional)
  • ¾–1 cup fresh or frozen blueberries
  • ½ tsp vanilla extract (optional)

Instructions

  1. Preheat oven to 300°F (150°C). Line a round cake pan or baking dish with parchment paper.
  2. In a large bowl, beat the egg whites with cream of tartar until stiff peaks form.
  3. In another bowl, mix the egg yolks, softened cream cheese, salt, protein powder, sweetener, and vanilla until smooth.
  4. Gently fold the yolk mixture into the whipped egg whites until just combined. Fold in the blueberries carefully.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 30–35 minutes until golden and set. Let cool completely before slicing.
