Ingredients (Makes 12–14 puffs)

  • 1½ cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 large egg
  • ¾ cup almond flour
  • 1 scoop unflavored whey protein powder (optional for extra protein)
  • 1 tsp garlic powder
  • ½ tsp baking powder
  • ¼ tsp salt
  • 2 tbsp grated Parmesan
  • Fresh parsley, chopped (for topping)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, melt mozzarella and cream cheese together (about 45–60 seconds), stirring until smooth.
  3. Quickly mix in the egg, almond flour, protein powder (if using), garlic powder, baking powder, salt, and Parmesan until a soft dough forms.
  4. Scoop small portions (about 1–1½ tablespoons) and roll into balls. Place on the baking sheet.
  5. Sprinkle with extra Parmesan and chopped parsley.
  6. Bake for 12–15 minutes until puffed and golden brown.
