- 2 medium zucchini, shredded (about 3 cups)
- 2 large eggs, beaten
- 1 cup shredded mozzarella or cheddar cheese
- 2 tbsp fresh dill, chopped (or 1 tsp dried)
- 2 tbsp almond flour or coconut flour (optional, for binding)
- ½ tsp garlic powder
- Salt and black pepper to taste
- 1–2 tbsp olive oil or avocado oil for frying
Instructions
- Shred the zucchini and place in a clean kitchen towel or cheesecloth. Squeeze out as much liquid as possible.
