High-Protein Teriyaki Chicken Stir-Fry

Ingredients (Serves 4)

  • 1 ½ lbs boneless chicken breast or thighs, cut into bite-sized pieces
  • 1 bag (12–16 oz) frozen broccoli stir-fry vegetables
  • 2–3 cups cauliflower rice (fresh or frozen)
  • ⅓ cup sugar-free teriyaki sauce (or regular + extra water to thin)
  • 1 tbsp olive oil or avocado oil
  • 1–2 garlic cloves, minced (optional)
  • Salt and pepper to taste
  • Optional: sesame seeds or green onions for garnish

Instructions

  1. Heat oil in a large skillet or wok over medium-high heat. Add chicken pieces, season with salt and pepper, and cook 5–7 minutes until golden and cooked through. Remove and set aside.
  2. In the same skillet, add the frozen broccoli stir-fry vegetables. Cook 4–5 minutes until heated and slightly tender.
  3. Add cauliflower rice and cook another 2–3 minutes until heated through.
  4. Return the chicken to the skillet. Pour in the sugar-free teriyaki sauce and toss everything together for 1–2 minutes until well coated and hot.
  5. Taste and adjust seasoning if needed. Serve immediately or portion into meal prep containers.
