Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts
  • 12–16 asparagus spears, trimmed
  • 4–6 slices mozzarella or provolone cheese
  • 1 tbsp olive oil or butter
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup chicken broth
  • 2 tbsp butter (for the sauce)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C) if finishing in the oven, or prepare a large oven-safe skillet.
  2. Butterfly or carefully slice a pocket into each chicken breast. Season both sides with garlic powder, paprika, salt, and pepper.
  3. Stuff each breast with 3–4 asparagus spears and a slice of cheese. Secure with toothpicks if needed.
  4. Heat oil in a large skillet over medium-high heat. Sear the stuffed chicken 3–4 minutes per side until golden.
  5. Add chicken broth and butter to the pan. Spoon some sauce over the chicken.
  6. Cover and cook on the stovetop 8–10 minutes, or transfer to the oven for 10–12 minutes until chicken reaches 165°F internal temperature and cheese is melted.
  7. Remove toothpicks, spoon pan sauce over the top, and garnish with parsley if desired. Serve hot.
