Ingredients (Serves 4)
- 4 large boneless, skinless chicken breasts (about 800g / 28oz)
- 1 cup (240ml) heavy cream
- ½ cup (120ml) chicken broth
- 4 oz (113g) cream cheese, softened
- ½ cup (50g) grated parmesan cheese
- 3 garlic cloves, minced
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp black pepper
- 2 cups fresh spinach, roughly chopped
- ⅓ cup sun-dried tomatoes, chopped (oil drained, optional for stricter zero carb)
- Fresh basil leaves for garnish
Instructions
- Place chicken breasts in the bottom of the crockpot.
- In a bowl, whisk together heavy cream, chicken broth, cream cheese, parmesan, minced garlic, Italian seasoning, salt, and pepper until smooth.
- Pour the sauce over the chicken.
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until chicken is tender.
- Stir in chopped spinach and sun-dried tomatoes during the last 30 minutes of cooking.
- Once done, remove chicken, slice if desired, and spoon extra sauce over the top.
- Garnish with fresh basil leaves before serving.
