Ingredients (Makes 12–15 cookies)

  • 2 cups (200g) almond flour
  • ⅓ cup (35g) vanilla whey protein powder
  • ⅓ cup allulose or monk fruit sweetener
  • ½ cup (113g) butter or coconut oil, softened
  • 4 oz (113g) cream cheese, softened (for extra creaminess)
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp salt

Instructions

  1. Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a large bowl, beat softened butter and cream cheese until smooth and creamy.
  3. Add egg, vanilla extract, and sweetener. Mix well.
  4. Stir in almond flour, protein powder, baking powder, and salt until a thick dough forms.
  5. Scoop rounded tablespoons of dough and roll into balls. Gently flatten into rounds on the baking sheet.
  6. Bake for 12–16 minutes until edges are lightly golden (centers should still look pale).
  7. Cool on the baking sheet for 10 minutes before transferring to a wire rack.
