Ingredients (Serves 6)
- 8 large eggs
- 1 cup full-fat cottage cheese or ricotta
- 1½ cups shredded mozzarella or cheddar cheese (divided)
- 2 cups fresh spinach, chopped (or 1 cup frozen, thawed and drained)
- ¼ cup heavy cream
- 2 green onions, sliced
- 2 garlic cloves, minced
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- Optional: ½ cup cooked crumbled bacon or diced ham for extra protein
- Fresh chives or parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or round baking dish.
- In a large bowl, whisk the eggs, cottage cheese, heavy cream, garlic, salt, pepper, and garlic powder until smooth.
- Stir in the chopped spinach, green onions, and 1 cup of the shredded cheese (plus bacon or ham if using).
- Pour the mixture into the prepared dish and sprinkle the remaining cheese on top.
- Bake for 30–35 minutes until the center is set and the top is golden brown.
