Ingredients (Makes 6–8 pocket tacos)
- 1½ lbs (680g) lean ground beef
- 1 tbsp olive oil
- 1 small onion, finely diced
- 2–3 garlic cloves, minced
- 1 packet sugar-free taco seasoning (or homemade)
- 1½ cups (150g) shredded Mexican blend or cheddar cheese
- 6–8 low-carb tortillas (or large cheese rounds for zero-carb version)
- Optional fillings: diced green chilies, jalapeños, cilantro
- Toppings: sour cream, salsa, avocado, fresh cilantro
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add onion and cook 2–3 minutes until soft. Add garlic and cook 30 seconds.
- Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
- Stir in taco seasoning and a splash of water. Simmer 2–3 minutes until thickened. Remove from heat.
- Warm low-carb tortillas. Place a generous spoonful of beef and a handful of cheese on one half of each tortilla. Fold over to form a pocket.
- Cook the folded tacos in a clean skillet or griddle over medium heat for 2–3 minutes per side until golden and crispy and the cheese is fully melted.
