Ingredients (Serves 4)
- 4 salmon fillets (about 6 oz / 170g each)
- 4 cups fresh spinach
- 3 garlic cloves, minced
- ¾ cup heavy cream
- ¼ cup chicken or vegetable broth
- ⅓ cup grated Parmesan cheese
- 2 tbsp butter or olive oil
- 1 tsp garlic powder
- ½ tsp paprika
- Salt and black pepper to taste
- Optional: lemon wedges and fresh dill for serving
Instructions
- Season salmon fillets on both sides with salt, pepper, garlic powder, and paprika.
- Heat 1 tbsp butter or oil in a large skillet over medium-high heat. Sear salmon skin-side up for 4–5 minutes until golden. Flip and cook another 3–4 minutes until cooked through. Remove and set aside.
- In the same skillet, add remaining butter. Sauté garlic for 30 seconds, then add spinach and cook until just wilted.
- Pour in the heavy cream and broth. Stir in Parmesan and simmer 2–3 minutes until the sauce thickens slightly. Season to taste.
- Return salmon to the pan, nestling it into the creamy spinach. Spoon a little sauce over the top.
- Serve immediately with lemon wedges if desired.
