High-Protein Creamy Spinach Salmon

Ingredients (Serves 4)

  • 4 salmon fillets (about 6 oz / 170g each)
  • 4 cups fresh spinach
  • 3 garlic cloves, minced
  • ¾ cup heavy cream
  • ¼ cup chicken or vegetable broth
  • ⅓ cup grated Parmesan cheese
  • 2 tbsp butter or olive oil
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Salt and black pepper to taste
  • Optional: lemon wedges and fresh dill for serving

Instructions

  1. Season salmon fillets on both sides with salt, pepper, garlic powder, and paprika.
  2. Heat 1 tbsp butter or oil in a large skillet over medium-high heat. Sear salmon skin-side up for 4–5 minutes until golden. Flip and cook another 3–4 minutes until cooked through. Remove and set aside.
  3. In the same skillet, add remaining butter. Sauté garlic for 30 seconds, then add spinach and cook until just wilted.
  4. Pour in the heavy cream and broth. Stir in Parmesan and simmer 2–3 minutes until the sauce thickens slightly. Season to taste.
  5. Return salmon to the pan, nestling it into the creamy spinach. Spoon a little sauce over the top.
  6. Serve immediately with lemon wedges if desired.
