Ingredients (Serves 4)

  • 1½ lbs salmon fillet, cut into bite-sized cubes
  • 1 tbsp olive oil or avocado oil
  • Salt and black pepper to taste
  • ½ tsp garlic powder
  • ½ tsp paprika (optional)

Creamy Mustard Sauce:

  • ⅓ cup Greek yogurt or light cream cheese
  • 2 tbsp Dijon mustard
  • 1 tbsp whole grain mustard (optional)
  • 1–2 tbsp heavy cream or water to thin
  • 1 tsp lemon juice
  • Salt and pepper to taste

For Garnish:

  • 2–3 tbsp chopped green onions (scallions)

Instructions

  1. Pat the salmon cubes dry and season with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil in a large non-stick skillet over medium-high heat.
  3. Add the salmon cubes in a single layer and cook for 2–3 minutes per side until golden and just cooked through. Remove and set aside.
  4. In a small bowl, whisk together Greek yogurt, Dijon mustard, whole grain mustard (if using), lemon juice, and a splash of cream until smooth. Season to taste.
  5. Return the salmon to the pan or transfer to a serving plate. Spoon the creamy mustard sauce over the top.
  6. Sprinkle generously with chopped green onions and serve immediately.
