Ingredients (Makes about 12–15 fritters, Serves 4)

  • 4 cups cauliflower rice (fresh or frozen, squeezed very dry)
  • 1 cup shredded cheddar or mozzarella cheese
  • ⅓ cup (35g) unflavored or cheese-flavored whey protein powder
  • 3 large eggs
  • ¼ cup almond flour or coconut flour
  • 2 green onions, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 3–4 tbsp olive oil or avocado oil for frying

For the Creamy Dip:

  • ½ cup sour cream or Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp chopped fresh dill or parsley
  • ½ tsp garlic powder
  • Pinch of smoked paprika or red pepper flakes
  • Salt to taste

Instructions

  1. Place cauliflower rice in a clean kitchen towel and squeeze out as much moisture as possible.
  2. In a large bowl, mix cauliflower, shredded cheese, protein powder, eggs, almond flour, green onions, garlic, onion powder, salt, and pepper until a cohesive mixture forms.
  3. Heat 2 tbsp oil in a large skillet over medium heat.
  4. Scoop 2–3 tbsp of mixture per fritter and flatten gently into patties. Fry 3–4 minutes per side until deep golden and crispy. Work in batches, adding more oil as needed.
  5. Drain on paper towels.
  6. Mix all dip ingredients in a small bowl. Top with paprika or herbs.
  7. Serve fritters warm with the creamy dip.
