Donut Batter
- 1 cup almond flour
- ½ cup vanilla whey protein powder
- ¼ cup allulose or preferred sugar-free sweetener
- 1 tsp baking powder
- ¼ tsp salt
- 2 large eggs
- ⅓ cup plain Greek yogurt
- 2 tbsp melted butter or coconut oil
- 1 tsp vanilla extract
- ¾ cup fresh or frozen blueberries
Optional Glaze
- 2 tbsp cream cheese, softened
- 1 tbsp heavy cream
- 1–2 tbsp allulose (powdered)
- ½ tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a donut pan well.
- In a large bowl, mix almond flour, protein powder, sweetener, baking powder, and salt.
- Add eggs, Greek yogurt, melted butter, and vanilla. Stir until smooth.
- Gently fold in the blueberries.
- Spoon or pipe the batter into the donut pan, filling each cavity about ¾ full.
- Bake for 12–15 minutes until golden and a toothpick comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.
- For the glaze, mix cream cheese, heavy cream, powdered sweetener, and vanilla until smooth. Drizzle over cooled donuts.
