Ingredients (Makes 4 individual pans)

  • 1 lb cooked ground chicken, turkey, or beef (optional for extra protein)
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup low-carb pizza sauce or sugar-free marinara
  • 1 cup sliced mushrooms
  • 20–25 slices turkey pepperoni or regular pepperoni
  • ½ tsp Italian seasoning
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • Optional: ½ cup ricotta or cottage cheese for creaminess

Instructions

  1. Preheat oven to 375°F (190°C).
  2. If using ground meat, cook it in a skillet until browned. Season with Italian seasoning, garlic powder, salt, and pepper. Drain any excess fat.
  3. In each foil pan, spread a thin layer of pizza sauce on the bottom.
  4. Add a layer of cooked meat (if using), then sprinkle with mozzarella and Parmesan.
  5. Top with sliced mushrooms and pepperoni slices.
  6. Add another light layer of cheese on top.
  7. Bake for 18–22 minutes until the cheese is melted, bubbly, and golden.
  8. Let cool for a few minutes before serving.
