High-Protein Flower Cookies

Ingredients (Makes 12–14 cookies)

  • 1½ cups almond flour
  • ⅓ cup vanilla or unflavored whey protein powder
  • ¼ cup butter or coconut oil, softened
  • ⅓ cup allulose or preferred sugar-free sweetener
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt
  • Optional: 1–2 tbsp heavy cream if dough is too dry

Instructions

  1. Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. In a bowl, cream the softened butter and sweetener until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Add almond flour, protein powder, baking powder, and salt. Mix until a soft dough forms. Add a splash of cream if needed.
  5. Transfer the dough to a piping bag fitted with a large star tip (or shape by hand into flowers).
  6. Pipe flower shapes onto the prepared baking sheet.
  7. Bake for 12–15 minutes until the edges are lightly golden.
  8. Cool completely on the baking sheet before transferring.
