Ingredients (Serves 2–3 / Makes 6 pancakes)

  • 1 lb breakfast sausage (sugar-free)
  • 1 cup (100g) almond flour
  • ⅓ cup (35g) unflavored or vanilla whey protein powder
  • 2 large eggs
  • ½ cup (120ml) unsweetened almond milk
  • 1 tsp baking powder
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • 6–8 slices cheddar or mozzarella cheese
  • Butter and sugar-free maple syrup for serving

Instructions

  1. Cook sausage in a skillet, breaking it into small crumbles. Drain excess fat and set aside.
  2. In a bowl, whisk almond flour, protein powder, baking powder, garlic powder, salt, and pepper.
  3. Add eggs and almond milk. Mix until smooth batter forms.
  4. Heat a skillet or griddle over medium heat. Cook pancakes (¼ cup batter each) until golden, about 2–3 minutes per side.
  5. Assemble stacks: pancake + cheese slice + sausage crumbles + another pancake. Repeat for tall stacks.
  6. Top with a pat of butter and drizzle generously with sugar-free syrup. Serve immediately while cheese is melty.
