High-Protein Mini Pancakes

Ingredients (Makes about 12–14 mini pancakes)

  • ½ cup almond flour
  • ¼ cup vanilla or unflavored whey protein powder
  • 1 tsp baking powder
  • Pinch of salt
  • 2 large eggs
  • ⅓ cup unsweetened almond milk (or heavy cream)
  • 1 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract
  • Optional: 1–2 tbsp allulose or preferred sugar-free sweetener
  • Sugar-free powdered sweetener for dusting

Instructions

  1. In a bowl, whisk together almond flour, protein powder, baking powder, salt, and sweetener (if using).
  2. In another bowl, beat the eggs, then mix in almond milk, melted butter, and vanilla.
  3. Pour the wet ingredients into the dry and stir until just combined (batter should be slightly thick).
  4. Heat a non-stick pan or griddle over medium heat and lightly grease.
  5. Drop small spoonfuls of batter to form mini pancakes. Cook 1–2 minutes per side until golden and cooked through.
  6. Stack on a plate and dust with sugar-free powdered sweetener before serving.
