- 1.5 lbs (680g) boneless chicken thighs or breasts, cut into bite-sized pieces
- 2 tbsp olive oil or avocado oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 3 medium carrots, sliced
- 2 celery stalks, sliced
- 1 medium zucchini, diced
- 4 cups chicken bone broth
- 1 can (14.5 oz) diced tomatoes (sugar-free)
- 2 cups chopped cabbage or kale

Instructions
