High-Protein Keto Dark Seeded Bread (Mug Bread)

This is a dark, seeded bread — a beautiful round loaf baked in a mug with a hearty, dark crumb, crunchy sesame seeds on top, and excellent sliceability. It pairs wonderfully with guacamole or your favorite toppings while delivering real bread satisfaction on a low-carb diet.

Why You’ll Love This Recipe

  • Rich dark color and seeded crust exactly like your photo
  • Soft yet sturdy texture that toasts beautifully
  • Very high protein for a bread recipe
  • Quick mug bread version or full loaf option
  • Versatile for sandwiches, avocado toast, or as a side

Ingredients (Makes 1 mug loaf or 8–10 slices)

  • ⅓ cup (35g) almond flour
  • 3 tbsp (25g) whey protein powder (unflavored)
  • 2 tbsp psyllium husk powder
  • 1 tbsp cocoa powder (for dark color)
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tbsp sesame seeds (plus extra for topping)
  • 1 large egg
  • 2 tbsp Greek yogurt or sour cream
  • 2 tbsp melted butter or olive oil
  • 1–2 tbsp water (as needed for consistency)
  • Optional: ½ tsp onion powder or Everything Bagel seasoning

Instructions

  1. Mug version: Generously grease a large microwave-safe mug. Mix all dry ingredients (including sesame seeds) in a small bowl.
  2. Add egg, Greek yogurt, melted butter, and water. Stir until a thick batter forms (it should be like thick muffin batter).
  3. Pour into the mug. Sprinkle extra sesame seeds on top.
  4. Microwave on high for 2–3 minutes until set (it will rise nicely). Let cool 2 minutes before removing.
  5. Oven version (recommended for best crust): Preheat oven to 350°F (175°C). Pour batter into a small parchment-lined ramekin or loaf pan. Bake 18–25 minutes until firm and golden-dark on top.
  6. Cool completely before slicing. Toast slices for extra crispiness.
