- 1 medium head cauliflower (about 1.5 lbs / 680g), riced and moisture squeezed out
- 1 cup (100g) shredded mozzarella or cheddar cheese
- ⅓ cup (35g) unflavored or cheese whey protein powder
- 4 large eggs
- ¼ cup almond flour
- 2 tbsp grated parmesan cheese
- 1 tsp baking powder
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper

Instructions
- Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper.
- Rice the cauliflower (or pulse in a food processor) and squeeze out as much moisture as possible using a clean kitchen towel.
