Ingredients (Serves 4)

  • 1.5 lbs (680g) large shrimp, peeled and deveined
  • 4 cups cauliflower rice (fresh or frozen)
  • 2 ripe avocados, sliced
  • 4 tbsp butter (or ghee)
  • 4 garlic cloves, minced
  • 2 tbsp fresh lemon juice + extra lemon wedges
  • 1 tsp lemon zest
  • 1 tsp smoked paprika
  • ½ tsp chili flakes or cayenne (optional)
  • 1 tsp Italian seasoning or fresh parsley
  • Salt and black pepper, to taste
  • Fresh chopped parsley for garnish
  • 2 tbsp olive oil

Instructions

  1. Pat shrimp dry and season with smoked paprika, salt, pepper, and Italian seasoning.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Cook shrimp in a single layer for 2–3 minutes per side until pink and seared. Remove and set aside.
  3. In the same skillet, melt butter. Add minced garlic and cook for 30–60 seconds until fragrant.
  4. Stir in lemon juice, lemon zest, and chili flakes. Simmer for 1 minute. Return shrimp to the pan and toss to coat in the sauce.
  5. Meanwhile, sauté cauliflower rice in a separate pan with a little oil, salt, and pepper for 3–5 minutes until tender.
  6. Assemble bowls: Add cauliflower rice, top with shrimp, avocado slices, and generous spoonfuls of garlic lemon butter sauce. Garnish with fresh parsley.
