Ingredients (Makes 20–24 balls)

Filling:

  • 1 cup (250g) natural peanut butter (no sugar added)
  • ½ cup (50g) vanilla or unflavored whey protein powder
  • ⅓ cup (65g) allulose or monk fruit sweetener (adjust to taste)
  • 1 tsp vanilla extract
  • Pinch of salt

Coating:

  • 1 cup (180g) sugar-free chocolate chips (Lily’s or similar)
  • 1 tbsp coconut oil or butter

Instructions

  1. In a medium bowl, mix peanut butter, protein powder, sweetener, vanilla, and salt until a thick dough forms. If too crumbly, add 1–2 tsp melted coconut oil.
  2. Scoop about 1 tablespoon of mixture and roll into smooth balls. Place on a parchment-lined tray. Freeze for 15–20 minutes to firm up.
  3. Melt sugar-free chocolate chips with coconut oil in the microwave in 20-second intervals, stirring until smooth.
  4. Dip each chilled ball into the melted chocolate using a fork or toothpick. Let excess drip off, then place back on the parchment.
