Cake
- 1½ cups almond flour
- ½ cup chocolate whey protein powder
- ⅓ cup unsweetened cocoa powder
- ⅓ cup allulose or preferred sugar-free sweetener
- 1 tsp baking powder
- ¼ tsp salt
- 3 large eggs
- ⅓ cup melted butter or coconut oil
- ½ cup unsweetened almond milk
- 1 tsp vanilla extract
- ½ tsp instant coffee (optional, for deeper chocolate flavor)
Glaze
- ¼ cup sugar-free chocolate chips or chopped dark chocolate
- 2 tbsp heavy cream
- 1 tsp butter
Instructions
- Preheat oven to 350°F (175°C). Line a small loaf pan with parchment paper.
- In a large bowl, whisk together almond flour, protein powder, cocoa powder, sweetener, baking powder, and salt.
- Add eggs, melted butter, almond milk, vanilla, and instant coffee. Mix until smooth and well combined.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Cool completely in the pan.
- For the glaze: Melt chocolate chips, heavy cream, and butter together until smooth. Pour over the cooled loaf and let set.
