Ingredients (Serves 6–8)
- 4 medium zucchinis, thinly sliced lengthwise
- 2 large eggs
- 1 cup (225g) ricotta or cottage cheese
- 1½ cups (150g) shredded mozzarella (divided)
- ½ cup (50g) grated parmesan cheese
- ⅓ cup (35g) unflavored whey protein powder
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup cherry tomatoes, halved
- 2 tbsp chopped fresh basil (plus extra for garnish)
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.
- In a bowl, mix ricotta/cottage cheese, eggs, 1 cup mozzarella, parmesan, protein powder, garlic, Italian seasoning, salt, and pepper until smooth.
- Layer half the zucchini slices in the bottom of the dish. Spread half the cheese mixture over the zucchini. Repeat layers.
- Top with halved cherry tomatoes, remaining mozzarella, and a drizzle of olive oil.
- Bake 35–45 minutes until bubbly, golden, and zucchini is tender.
