Ingredients (Serves 2–3)

  • 12 large sea scallops, patted dry
  • 1 tbsp olive oil or butter
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • ½ cup heavy cream
  • ½ cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 2 oz cream cheese
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season scallops with salt and pepper. Heat oil or butter in a skillet over medium-high heat and sear scallops 1–2 minutes per side until golden. Remove and set aside.
  3. In the same skillet, sauté mushrooms and garlic until soft and lightly browned.
  4. Lower heat and stir in heavy cream, cream cheese, garlic powder, mozzarella, and Parmesan until smooth and creamy.
  5. Pour the mushroom cheese sauce into a small baking dish or ramekin. Nestle the seared scallops on top.
  6. Bake 8–10 minutes until bubbly and lightly golden.
  7. Garnish with fresh parsley and serve hot.
