  • 2 lbs (900g) ground beef (80/20 or lean)
  • 3–4 bell peppers (red, green, yellow), sliced
  • 8–10 oz (225–280g) mushrooms, sliced
  • 1 large onion, sliced
  • 3–4 cloves garlic, minced
  • 2 cups (200g) shredded Mexican blend or cheddar cheese
  • 2 tbsp olive oil or avocado oil
  • 1 tbsp chili powder
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • Optional: ½ tsp cayenne or red pepper flakes for heat
  • Fresh cilantro or parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up (6–8 minutes). Drain excess fat if needed.
  3. Add sliced onions, bell peppers, mushrooms, and garlic. Cook 5–7 minutes until vegetables are tender-crisp.
  4. Stir in chili powder, cumin, paprika, oregano, salt, and pepper. Cook 1–2 more minutes until fragrant.
  5. Transfer the mixture to a 9×13 glass baking dish. Sprinkle shredded cheese evenly over the top.
  6. Bake 15–20 minutes until cheese is melted, bubbly, and lightly golden.
  7. Let rest 5 minutes. Garnish with fresh cilantro or parsley and serve.
