Ingredients (Makes 4 burgers)

For the Low-Carb Muffins (or use store-bought low-carb English muffins)

  • 4 large eggs
  • ½ cup almond flour
  • 2 tbsp cream cheese, softened
  • ½ tsp baking powder
  • Pinch of salt

For the Burgers

  • 1 lb ground beef (80/20 or leaner)
  • 4 slices cheddar or American cheese
  • 4 slices bacon, cooked crispy
  • 1 tomato, sliced
  • Lettuce leaves
  • Salt and pepper to taste
  • Optional: sugar-free ketchup or mustard

Instructions

  1. Make the muffins (if homemade): Mix eggs, almond flour, cream cheese, baking powder, and salt until smooth. Pour into 4 greased muffin rings or a pan. Cook on a griddle or in the oven at 350°F for 10–12 minutes until set and golden. Slice and lightly grill for marks.
  2. Season ground beef with salt and pepper. Form into 4 patties and cook in a skillet over medium-high heat 3–4 minutes per side until desired doneness. Add cheese in the last minute to melt.
  3. Cook bacon until crispy if not already done.
  4. Assemble: Place lettuce on the bottom muffin half, add the cheesy beef patty, bacon, tomato slice, and top muffin half.
  5. Serve immediately while hot and melty.
