Ingredients (Serves 6)

  • 2 lbs (900g) ground chicken
  • 1 egg
  • ⅓ cup (35g) almond flour or crushed pork rinds
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 1 cup shredded mozzarella or cheddar
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper.
  2. Mix ground chicken, egg, almond flour, garlic powder, Italian seasoning, salt, and pepper.
  3. Press half the mixture into the loaf pan. Create a groove and fill with shredded cheese.
  4. Top with remaining chicken mixture. Seal edges.
  5. Bake 50–60 minutes until cooked through and golden.
  6. Garnish with parsley. Let rest 10 minutes before slicing.
