Ingredients (Makes 4 tacos)
- 4 low-carb tortillas or cheese shells (1 cup shredded cheese per shell)
- 1.5 lbs (680g) flank steak or skirt steak, thinly sliced
- 2 tbsp taco seasoning (sugar-free) or carne asada seasoning
- 2 tbsp olive oil or avocado oil
- 2 cups (450g) prepared guacamole (or mash 2–3 ripe avocados with lime, salt, and cilantro)
- Pico de Gallo: 2 tomatoes, ½ red onion, fresh cilantro, lime juice, salt
Instructions
- Season the steak slices generously with taco seasoning. Heat oil in a large skillet over high heat. Sear steak 2–3 minutes per side until nicely browned and cooked to your liking. Rest 5 minutes, then slice thinner if needed.
- Make shells: For low-carb tortillas — warm in skillet. For cheese shells: melt cheese circles in a skillet, let cool slightly, then drape over a taco holder or rolling pin to form crispy shells.
- Assemble: Spread a generous layer of guacamole on each shell. Add sliced steak, then top with fresh pico de gallo (diced tomatoes, onion, cilantro, lime).
- Serve immediately while shells are crispy and steak is warm.
