High-Protein Beef Vegetable Soup

Ingredients (Serves 6)

  • 2 lbs (900g) ground beef or stew meat
  • 1 small head cabbage, chopped
  • 3 carrots, sliced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 4 cups (950ml) beef broth
  • 1 (14.5 oz) can diced tomatoes
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Stovetop: Brown beef with onion and garlic in a large pot. Drain fat.
  2. Add cabbage, carrots, celery, broth, tomatoes, Italian seasoning, salt, and pepper.
  3. Bring to a boil, then simmer 25–35 minutes until veggies are tender.
  4. Crockpot: Add all ingredients and cook on low 6–8 hours or high 3–4 hours.
  5. Garnish with fresh parsley.

Prep Time: 10 minutes Cook Time: 30 minutes (stovetop) or 4–8 hours (crockpot) Total Time: 40 minutes (stovetop)
