Ingredients (Serves 4–6)

  • 8–10 low-carb tortillas (or cheese wraps)
  • 1.5 lbs (680g) ground beef
  • 1 packet taco seasoning (sugar-free) or 2 tbsp homemade
  • 1 small onion, diced
  • 2 cups (200g) shredded cheddar or Mexican cheese blend
  • 1 cup (100g) shredded mozzarella for extra melt
  • Optional: diced bell peppers, jalapeños
  • Fresh cilantro or green onions for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook ground beef with onion in a skillet until browned. Drain fat. Stir in taco seasoning and any veggies. Simmer 3–5 minutes.
  3. In a round baking dish or on a baking sheet, layer: tortilla, meat mixture, cheese. Repeat layers, ending with a tortilla and cheese on top.
  4. Bake 15–20 minutes until cheese is bubbly and tortillas are crispy.
  5. Let rest 5 minutes. Cut into wedges and garnish with cilantro or green onions.
