- 8–10 low-carb tortillas (or cheese wraps)
- 1.5 lbs (680g) ground beef
- 1 packet taco seasoning (sugar-free) or 2 tbsp homemade
- 1 small onion, diced
- 2 cups (200g) shredded cheddar or Mexican cheese blend
- 1 cup (100g) shredded mozzarella for extra melt
- Optional: diced bell peppers, jalapeños
- Fresh cilantro or green onions for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cook ground beef with onion in a skillet until browned. Drain fat. Stir in taco seasoning and any veggies. Simmer 3–5 minutes.
- In a round baking dish or on a baking sheet, layer: tortilla, meat mixture, cheese. Repeat layers, ending with a tortilla and cheese on top.
