Ingredients (Serves 2–4)
- 2 medium zucchini (or 4 small), halved lengthwise
- ½ lb lean ground beef
- ½ cup sugar-free pizza sauce or marinara
- 1 cup shredded mozzarella cheese
- 12–16 slices pepperoni
- ½ tsp Italian seasoning
- ½ tsp garlic powder
- Salt and black pepper to taste
- Optional: grated Parmesan and fresh parsley
Instructions
- Preheat air fryer to 375°F (190°C).
- Scoop out the centers of the zucchini halves to create boats. Lightly season with salt and pepper.
- In a skillet, cook ground beef until browned. Drain excess fat. Stir in pizza sauce, Italian seasoning, garlic powder, salt, and pepper. Simmer 2 minutes.
- Spoon the meat mixture into the zucchini boats. Top with mozzarella cheese and pepperoni slices.
- Place boats in the air fryer basket (in batches if needed). Air fry for 10–12 minutes until cheese is melted and bubbly and zucchini is tender.
