Ingredients (Serves 6)

  • 1 ½ lbs lean ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp taco seasoning (sugar-free)
  • 1 cup diced tomatoes (fresh or no-sugar-added canned)
  • 1 cup diced bell peppers (red and green)
  • 1 ½ cups shredded Mexican blend or cheddar-mozzarella cheese
  • Salt and black pepper to taste
  • Optional: chopped cilantro or green onions for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 glass baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
  3. Add onion and garlic; cook 2–3 minutes. Stir in taco seasoning, diced tomatoes, and peppers. Simmer 3–4 minutes.
  4. Transfer the mixture to the baking dish and spread evenly.
  5. Top with shredded cheese.
  6. Bake for 15–18 minutes until the cheese is melted and bubbly.
  7. Let rest 5 minutes. Garnish if desired and serve.
