Ingredients (Serves 4)

  • 1 lb lean ground beef (or turkey)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning (sugar-free)
  • ½ cup salsa or diced tomatoes (no sugar added)
  • ¼ cup water or beef broth
  • 1 ½ cups shredded cheddar or Mexican blend cheese
  • ½ cup sour cream or Greek yogurt (for topping)
  • Fresh toppings: diced tomatoes, sliced green onions
  • Optional: sliced jalapeños or cilantro

Instructions

  1. Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  2. Add onion and garlic; cook 2–3 minutes until softened.
  3. Stir in taco seasoning, salsa, and water/broth. Simmer 3–4 minutes until slightly thickened.
  4. Sprinkle shredded cheese evenly over the top.
  5. Cover the skillet (or transfer to a 375°F / 190°C oven for 3–5 minutes) until the cheese is fully melted and bubbly.
  6. Remove from heat. Dollop or drizzle with sour cream/Greek yogurt, then top with diced tomatoes and green onions.
  7. Serve hot straight from the skillet.
