Ingredients (Serves 6)

  • 1 lb lean ground beef
  • 1 medium head green cabbage, chopped
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 6 cups beef broth (or bone broth)
  • 1 can (14.5 oz) diced tomatoes (no sugar added)
  • 1 tsp paprika
  • 1 tsp dried oregano or Italian seasoning
  • ½ tsp black pepper
  • Salt to taste
  • 1 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  2. Add onion and carrots. Cook for 3–4 minutes until softened. Stir in garlic and cook 30 seconds more.
  3. Add chopped cabbage, diced tomatoes, beef broth, paprika, oregano, salt, and pepper. Stir well.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes until cabbage is tender.
  5. Taste and adjust seasoning. Ladle into bowls and garnish with fresh parsley if desired.
