Ingredients (Serves 4)

  • 1 medium spaghetti squash (about 3–4 cups cooked strands)
  • 2 tbsp butter or olive oil, melted
  • 3 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 scoop unflavored or garlic whey protein powder (optional for extra protein)
  • 1 tsp Italian seasoning or dried parsley
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cook the spaghetti squash (microwave or roast), then scrape out the strands and squeeze out excess moisture.
