Ingredients (Serves 10)

Cake

  • 1½ cups almond flour
  • ½ cup chocolate whey protein powder
  • ⅓ cup unsweetened cocoa powder
  • ⅓ cup allulose or preferred sugar-free sweetener
  • 1 tsp baking powder
  • ¼ tsp salt
  • 3 large eggs
  • ⅓ cup melted butter or coconut oil
  • ½ cup unsweetened almond milk
  • 1 tsp vanilla extract
  • ½ tsp instant coffee (optional, for deeper chocolate flavor)

Glaze

  • ¼ cup sugar-free chocolate chips or chopped dark chocolate
  • 2 tbsp heavy cream
  • 1 tsp butter

Instructions

  1. Preheat oven to 350°F (175°C). Line a small loaf pan with parchment paper.
  2. In a large bowl, whisk together almond flour, protein powder, cocoa powder, sweetener, baking powder, and salt.
  3. Add eggs, melted butter, almond milk, vanilla, and instant coffee. Mix until smooth and well combined.
  4. Pour batter into the prepared loaf pan and smooth the top.
  5. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out mostly clean.
  6. Cool completely in the pan.
  7. For the glaze: Melt chocolate chips, heavy cream, and butter together until smooth. Pour over the cooled loaf and let set.
  8. Slice and serve.
