Ingredients (Makes 9 bars)

  • 6 large eggs
  • 1 cup heavy cream or full-fat coconut milk
  • ⅓ cup vanilla or unflavored whey protein powder
  • ⅓ cup allulose or preferred sugar-free sweetener
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon (plus extra for topping)
  • Pinch of salt
  • Optional: 1 tbsp melted butter for greasing

Instructions

  1. Preheat oven to 325°F (160°C). Lightly grease an 8×8-inch baking dish or line with parchment paper.
  2. In a blender or mixing bowl, combine eggs, heavy cream, protein powder, sweetener, vanilla, cinnamon, and salt. Blend until completely smooth.
  3. Pour the mixture into the prepared baking dish.
  4. Sprinkle a light dusting of cinnamon on top.
  5. Bake for 30–35 minutes until the center is just set and the top is lightly golden.
  6. Cool completely, then refrigerate for at least 2 hours before slicing into bars.
