Ingredients (Makes 8–10 bars)

Coconut Filling:

  • 1½ cups unsweetened shredded coconut
  • ⅓ cup vanilla or unflavored whey protein powder
  • 3 tbsp coconut cream or full-fat coconut milk
  • 2–3 tbsp allulose or preferred sugar-free sweetener
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: 1–2 tbsp Greek yogurt or cream cheese for extra creaminess

Chocolate Coating:

  • 1 cup sugar-free dark chocolate chips or chopped chocolate
  • 1 tsp coconut oil

Instructions

  1. In a bowl, mix shredded coconut, protein powder, sweetener, salt, vanilla, and coconut cream until a sticky dough forms. Add a little more coconut cream if needed.
  2. Press the mixture firmly into a small parchment-lined loaf pan or form into individual bars. Freeze for 20–30 minutes until firm.
  3. Melt the sugar-free chocolate with coconut oil in a microwave or double boiler until smooth.
  4. Dip each bar into the melted chocolate, coating completely. Place on parchment paper.
  5. Optional: Sprinkle a little extra shredded coconut on top before the chocolate sets.
  6. Refrigerate for 15–20 minutes until the chocolate hardens.
