Ingredients (Makes 8 slices)

  • 2 cups plain Greek yogurt
  • 1 cup cottage cheese
  • 3 large eggs
  • ⅓ cup allulose or preferred sugar-free sweetener (adjust to taste)
  • 1 tsp vanilla extract
  • 2–3 tbsp unsweetened cocoa powder (for dusting or mixing in)
  • Optional: 1 tbsp lemon juice or zest for brightness
  • Optional crust: ½ cup almond flour + 2 tbsp melted butter + pinch of sweetener

Instructions

  1. Preheat oven to 325°F (160°C) if baking. Line a springform pan or small cake pan with parchment.
  2. In a blender or food processor, blend Greek yogurt, cottage cheese, eggs, sweetener, and vanilla until completely smooth.
  3. (Optional) Press a simple almond flour crust into the bottom of the pan.
  4. Pour the cheesecake mixture into the pan. Smooth the top.
  5. Bake for 35–45 minutes until the edges are set and the center is slightly jiggly. (Or chill the no-bake version for 4+ hours.)
  6. Cool completely, then refrigerate for at least 2 hours.
  7. Dust the top with cocoa powder before slicing and serving.
