- 4 oz (115g) cream cheese, softened
- ½ cup (115g) butter, softened
- ½ cup allulose or powdered sweetener
- 1 large egg
- 1 tsp vanilla extract
- 1½ cups (150g) almond flour
- ⅓ cup (35g) vanilla whey protein powder
- ½ tsp baking powder
- ¼ tsp salt
- ¾ cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, beat cream cheese, butter, and sweetener until light and fluffy.
- Mix in the egg and vanilla.
- Add almond flour, protein powder, baking powder, and salt. Mix until a soft dough forms.
- Fold in the chopped pecans.
- Scoop tablespoon-sized balls of dough onto the baking sheet and gently flatten.
- Bake for 11–14 minutes until the edges are lightly golden. Let cool on the sheet for 5 minutes before transferring to a wire rack.
