High-Protein Cheesy Zucchini Bake

This is a golden, layered cheesy zucchini casserole with fresh tomatoes and herbs. A comforting high-protein, low-carb side or light main dish that’s bursting with flavor.

Ingredients (Serves 6–8)

  • 4 medium zucchinis, thinly sliced lengthwise
  • 2 large eggs
  • 1 cup (225g) ricotta or cottage cheese
  • 1½ cups (150g) shredded mozzarella (divided)
  • ½ cup (50g) grated parmesan cheese
  • ⅓ cup (35g) unflavored whey protein powder
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 2 tbsp chopped fresh basil (plus extra for garnish)
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.
  2. In a bowl, mix ricotta/cottage cheese, eggs, 1 cup mozzarella, parmesan, protein powder, garlic, Italian seasoning, salt, and pepper until smooth.
  3. Layer half the zucchini slices in the bottom of the dish. Spread half the cheese mixture over the zucchini. Repeat layers.
  4. Top with halved cherry tomatoes, remaining mozzarella, and a drizzle of olive oil.
  5. Bake 35–45 minutes until bubbly, golden, and zucchini is tender.
  6. Let rest 10 minutes. Garnish with fresh basil and serve.
