Ingredients (Makes 9–12 bars)

  • 8 large eggs
  • 2 cups (450g) full-fat Greek yogurt or cottage cheese (blended smooth)
  • ¾ cup (150g) allulose or powdered monk fruit sweetener
  • 1 cup (240ml) heavy cream
  • 2 tsp vanilla extract
  • ½ tsp cinnamon (plus extra for topping)
  • Pinch of nutmeg
  • Pinch of salt

Instructions

  1. Preheat oven to 325°F (165°C). Line an 8×8 or 9×9 pan with parchment paper.
  2. Blend all ingredients (eggs, Greek yogurt, sweetener, heavy cream, vanilla, cinnamon, nutmeg, and salt) until completely smooth.
  3. Pour into the prepared pan. Bake 35–45 minutes until set but still slightly jiggly in the center.
  4. Cool completely, then chill in the fridge for at least 2 hours (or overnight for best texture).
  5. Before serving, sprinkle with extra cinnamon (or a sugar-free sweetener blend) and broil or use a kitchen torch for a caramelized top.
