Ingredients (Makes 16 bars)

Crust:

  • 1½ cups (150g) almond flour
  • ⅓ cup (35g) vanilla whey protein powder
  • ⅓ cup (65g) allulose or powdered monk fruit sweetener
  • ⅓ cup (75g) melted butter or coconut oil
  • 1 large egg
  • ½ tsp vanilla extract
  • Pinch of salt

Filling:

  • 12 oz (340g) full-fat cream cheese, softened
  • ½ cup (110g) full-fat Greek yogurt
  • 1 scoop (30g) vanilla whey protein powder
  • ¼ cup (50g) allulose or powdered monk fruit sweetener
  • 1 large egg
  • 1 tsp vanilla extract

Topping:

  • 2 cups (300g) fresh or frozen strawberries (or mixed berries), chopped
  • 2–3 tbsp allulose (for berries)
  • 1 tbsp lemon juice
  • Icing: ½ cup powdered allulose + 2–3 tbsp heavy cream (or almond milk) + ½ tsp vanilla

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 or similar baking pan with parchment.
  2. Crust: Mix almond flour, protein powder, sweetener, salt, melted butter, egg, and vanilla until a dough forms. Press evenly into the pan. Bake 10–12 minutes until lightly golden.
  3. Filling: Beat cream cheese until smooth. Add Greek yogurt, protein powder, sweetener, egg, and vanilla. Mix until creamy. Spread over the baked crust.
  4. Berry Topping: Toss strawberries with sweetener and lemon juice. Scatter evenly over the filling.
  5. Bake 22–28 minutes until the filling is set and edges are golden. Cool completely.
  6. Icing: Mix powdered allulose with cream and vanilla until drizzlable. Drizzle over cooled bars. Chill 1–2 hours before slicing into squares.
